  • 1/2 cup evaporated milk
  • 2 large eggs, lightly beaten

  • 1/4 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C). Place your unbaked pie crust into a 9-inch pie plate. Crimp the edges as desired.
  2. In a large bowl, combine the mashed sweet potatoes, granulated sugar, and brown sugar. Mix until just combined.
  3. Add the melted butter to the sweet potato mixture and stir well.
  4. In a separate small bowl, whisk together the evaporated milk and the beaten eggs.
  5. Pour the milk and egg mixture into the sweet potato mixture. Add the vanilla extract, cinnamon, nutmeg, ginger, and salt.
  6. Whisk the filling until it is completely smooth and creamy. For the silkiest texture, you can press the mixture through a fine-mesh sieve into a large bowl.
  7. Pour the smooth filling into the prepared pie crust.
  8. Bake for 50 to 60 minutes. The pie is done when the edges are set and a knife inserted near the center comes out mostly clean. The center should still have a slight jiggle.
  9. Cool the pie completely on a wire rack for at least 3 hours before slicing. This step is key for achieving clean slices and preventing a soggy bottom.
