  • 1/4 cup fresh lime juice
  • 1 teaspoon ground cumin
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Prepare all vegetables: Dice the bell peppers and red onion, halve the tomatoes, and mince the jalapeño if you are using it.
  2. In a large bowl, combine the rinsed and drained black beans, black-eyed peas, corn, tomatoes, bell peppers, and red onion.
  3. In a small bowl, whisk together the olive oil, fresh lime juice, ground cumin, chili powder, salt, and black pepper to create the zesty lime dressing.
