1 sheet frozen puff pastry, thawed
4 ounces brie cheese, rind removed and cut into small cubes
1/2 cup cranberry sauce (whole berry or jellied)
1 tablespoon chopped pecans (optional, for topping)
1 egg, beaten (for egg wash)
Instructions
Preheat your oven to 400°F (200°C). Lightly grease a standard 12-cup muffin tin.
Unfold the thawed puff pastry sheet onto a lightly floured surface. Cut the pastry into 12 equal squares.
Gently press each pastry square into the cups of the muffin tin, forming a small cup shape.
Place one cube of brie cheese into the bottom of each pastry cup.
Top the brie with about 1 teaspoon of cranberry sauce. If using pecans, sprinkle a few pieces over the cranberry sauce.
Brush the exposed edges of the puff pastry lightly with the beaten egg wash.
Bake for 12 to 15 minutes, or until the pastry is golden brown and puffed, and the brie is melted and gooey.
Let the bites cool in the tin for 5 minutes before carefully removing them with a small offset spatula. Serve warm.
Notes
For make-ahead ease, you can assemble the bites up to 4 hours ahead of time. Keep them covered in the refrigerator and add about 3-5 minutes to the baking time.
If you want a slightly richer flavor, use a small dollop of fig jam instead of cranberry sauce for a different sweet and savory profile.
