Create the best party finger food with these cream cheese sausage balls. The addition of cream cheese keeps these savory bites juicy and tender, preventing the dryness common in classic recipes. This is an easy appetizer recipe perfect for game day or holiday entertaining.

Ingredients

Scale
  • 1 pound breakfast sausage (mild or spicy)
  • 8 ounces cream cheese, softened
  • 2 cups shredded sharp cheddar cheese
  • 2 cups Bisquick baking mix
  • 1/4 cup finely chopped fresh scallions (optional)

Instructions

  1. Preheat your oven to 350 degrees Fahrenheit. Line a baking sheet with parchment paper.
  2. In a large bowl, combine the breakfast sausage, softened cream cheese, shredded cheddar cheese, Bisquick baking mix, and scallions if you are using them.
  3. Mix all ingredients thoroughly using your hands until they are just combined. Do not overmix, as this can result in a tougher texture.
  4. Roll the mixture into small, uniform balls, about 1 inch in diameter. Place the balls on the prepared baking sheet, leaving about 1 inch of space between each one.
  5. Bake for 18 to 22 minutes, or until the sausage balls are golden brown and cooked through.
  6. Remove from the oven and let them cool slightly on the pan before serving. These are best served warm.

Notes

  • For make ahead appetizers, you can prepare the dough, roll the balls, and freeze them on the baking sheet. Once frozen, transfer the raw balls to a freezer-safe bag. Bake directly from frozen, adding 5-7 minutes to the baking time.
  • Serve these cheesy sausage bites with a side of warm honey mustard or ranch dressing for dipping.
  • If you prefer a spicier flavor, use hot breakfast sausage instead of mild.
