Create a rich, velvety creamed spinach side dish inspired by classic steakhouses. This recipe uses fresh spinach, cream cheese, and Parmesan for a decadent flavor that pairs perfectly with steak or holiday meals.

  • 1 tablespoon unsalted butter
  • 1 small shallot, minced
  • 2 cloves garlic, minced
  • 1 (10 ounce) package fresh baby spinach, washed and dried
  • 1/2 cup heavy cream
  • 2 ounces cream cheese, cut into cubes
  • 1/4 cup grated Parmesan cheese
  • 1/8 teaspoon ground nutmeg
  • Salt and black pepper to taste

Instructions

  1. Melt the butter in a large skillet or Dutch oven over medium heat.
  2. Add the minced shallot and cook until softened, about 3 minutes.
  3. Add the minced garlic and cook for 1 minute until fragrant. Do not let the garlic brown.
  4. Add the fresh spinach to the skillet in batches, stirring until it wilts down completely. This may take several minutes.
  5. Reduce the heat to low. Stir in the heavy cream, cream cheese cubes, and grated Parmesan cheese. Stir constantly until the cream cheese melts and the sauce is smooth and coats the spinach.
  6. Stir in the ground nutmeg, salt, and pepper. Taste and adjust seasoning as needed.
  7. Serve immediately as a rich and creamy spinach side dish.

Notes

  • For a deeper flavor, you can use frozen chopped spinach; thaw it completely and squeeze out all excess water before adding it to the skillet.
  • If you prefer a smoother sauce, you can use an immersion blender briefly after adding the cream, but be careful not to over-process.
  • This dish is excellent served alongside roast chicken or prime rib for a special dinner.
