  • 1.5 lbs boneless, skinless chicken breasts, cut into 1-inch pieces
  • 1 tablespoon olive oil
  • 1 tablespoon Cajun seasoning (store-bought or homemade)
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon butter
  • 1 small yellow onion, chopped
  • 2 cloves garlic, minced
  • 1 cup chicken broth
  • 1/2 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup chopped fresh parsley, for garnish
  • Cooked rice or pasta, for serving

Instructions

  1. Season the chicken pieces evenly with Cajun seasoning, garlic powder, onion powder, salt, and pepper.
  2. Heat the olive oil in a large skillet over medium-high heat. Add the seasoned chicken and cook until browned and cooked through, about 5 to 7 minutes. Remove the chicken from the skillet and set it aside.
  3. Add the butter to the same skillet. Add the chopped onion and cook until softened, about 3 minutes. Add the minced garlic and cook for 1 minute more until fragrant.
  4. Pour in the chicken broth and scrape up any browned bits from the bottom of the skillet. Bring the broth to a simmer.
  5. Reduce the heat to medium-low. Stir in the heavy cream and let the sauce simmer gently for 2 minutes until it begins to thicken slightly.
  6. Stir in the grated Parmesan cheese until the sauce is smooth. Taste the sauce and add more Cajun seasoning if you prefer more spice.
  7. Return the cooked chicken to the skillet. Stir to coat the chicken in the creamy sauce. Cook for 1 to 2 minutes until the chicken is heated through.
  8. Serve the creamy Cajun chicken immediately over your choice of cooked rice or pasta. Garnish with fresh parsley.
