  • 1 pound boneless, skinless chicken breasts, cut into 1-inch pieces
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried Italian seasoning
  • 1/2 teaspoon garlic powder
  • 1 small yellow onion, finely chopped
  • 4 cloves garlic, minced
  • 1/2 cup sun-dried tomatoes, drained and chopped
  • 1 1/2 cups chicken broth
  • 1 1/2 cups heavy cream
  • 1/2 cup grated Parmesan cheese, plus more for serving
  • 1/4 cup fresh basil, chopped
  • 12 ounces penne or rotini pasta

Instructions

  1. Season the chicken pieces with salt, pepper, Italian seasoning, and garlic powder.
  2. Heat the olive oil in a large, deep skillet or Dutch oven over medium-high heat. Add the seasoned chicken and cook until browned on all sides, about 5 to 7 minutes. Remove the chicken from the skillet and set it aside.
  3. Reduce the heat to medium. Add the chopped onion to the skillet and cook until softened, about 3 minutes. Add the minced garlic and chopped sun-dried tomatoes and cook for 1 minute until fragrant.
  4. Pour in the chicken broth, scraping up any browned bits from the bottom of the skillet. Bring the liquid to a simmer.
  5. Stir in the heavy cream and the uncooked pasta. Return the mixture to a gentle simmer, stirring often to prevent the pasta from sticking.
  6. Cook uncovered for 10 to 14 minutes, or until the pasta is al dente and most of the liquid has been absorbed into a thick sauce.
  7. Stir in the grated Parmesan cheese until the sauce is smooth and creamy.
  8. Return the cooked chicken to the skillet. Stir to combine and heat through for 1 minute.
  9. Remove the skillet from the heat. Stir in the fresh chopped basil. Serve immediately with extra Parmesan cheese on top.
