This recipe combines tender chicken, fluffy rice, and a rich, savory cream sauce into one comforting baked dish. It is simple enough for a weeknight dinner but satisfying enough for family gatherings.

  • 2 cups cooked chicken, shredded or cubed (rotisserie chicken works well)
  • 1 cup uncooked instant white rice
  • 1 (10.5 oz) can cream of chicken soup
  • 1 (10.5 oz) can cream of mushroom soup
  • 1 cup chicken broth
  • 1/2 cup milk
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup finely chopped onion
  • 1 teaspoon garlic powder
  • 1/2 teaspoon dried thyme
  • Salt and black pepper to taste
  • 2 tablespoons butter, melted (for topping, optional)

Instructions

  1. Preheat your oven to 375°F (190°C). Lightly grease a 9×13 inch baking dish.
  2. In a large bowl, combine the cooked chicken, uncooked instant rice, cream of chicken soup, cream of mushroom soup, chicken broth, milk, chopped onion, garlic powder, and thyme. Season with salt and pepper. Mix all ingredients until they are fully incorporated.
  3. Pour the chicken and rice mixture evenly into the prepared baking dish.
  4. Cover the baking dish tightly with aluminum foil.
  5. Bake for 40 minutes.
  6. Carefully remove the foil. Sprinkle the shredded cheddar cheese evenly over the top of the casserole. If you desire a slightly crispier top, brush the edges with melted butter.
  7. Return the dish to the oven, uncovered, and bake for an additional 10 to 15 minutes, or until the cheese is melted, bubbly, and lightly golden brown, and the rice is tender.
  8. Let the casserole rest for 5 minutes before serving. Serve this flavorful chicken over rice immediately.

Notes

  • For a richer flavor profile, substitute half of the chicken broth with dry white wine before baking.
  • If you do not have instant rice, use 1 cup of long-grain white rice that has been pre-cooked according to package directions. Adjust baking time if using pre-cooked rice, checking for doneness around 25 minutes.
