Ingredients
Scale
1 large head of broccoli (about 1.5 lbs), cut into uniform florets
2 tablespoons olive oil
1 teaspoon garlic powder
1/2 teaspoon kosher salt
1/4 teaspoon black pepper
1/4 cup grated Parmesan cheese
Instructions
Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius). Line a large baking sheet with parchment paper for easier cleanup.
Place the broccoli florets in a large bowl. Drizzle with olive oil.
Add the garlic powder, salt, and pepper to the bowl. Toss everything together until the broccoli is evenly coated. You want a light coating, not excess oil pooling at the bottom.
Spread the seasoned broccoli onto the prepared baking sheet in a single layer. Do not overcrowd the pan; use two sheets if necessary. Crowding steams the broccoli instead of roasting it.
Roast for 15 minutes.
Remove the baking sheet from the oven. Sprinkle the grated Parmesan cheese evenly over the broccoli.
Return the pan to the oven and roast for another 5 to 8 minutes, or until the edges of the broccoli are deeply browned and crispy, and the cheese is melted and slightly golden.
Remove from the oven and serve immediately as a quick vegetable side dish.
Notes
For the best crispy roasted broccoli, make sure your oven is fully preheated before the broccoli goes in. High heat is key for caramelization.
If you want extra flavor, add 1/2 teaspoon of lemon zest to the broccoli before roasting.
This dish works well for meal prep; store cooled leftovers in an airtight container for up to 4 days.
