1 large onion, chopped
4 cups beef broth
1 pound potatoes, peeled and diced (about 3 medium)
1 (10.75 ounce) can cream of mushroom soup
1 (10.75 ounce) can cream of celery soup
1 teaspoon dried mustard powder
1 teaspoon Worcestershire sauce
1/2 teaspoon garlic powder
1/4 teaspoon black pepper
1/4 teaspoon salt (adjust to taste)
8 ounces Velveeta cheese, cubed
8 ounces sharp cheddar cheese, shredded
1/2 cup milk (for thinning, optional)

Instructions
In a large skillet over medium heat, cook the ground beef and chopped onion until the beef is fully browned and the onion is soft. Drain off all excess grease.
Transfer the cooked beef and onion mixture to the basin of your slow cooker.
Add the beef broth, diced potatoes, cream of mushroom soup, cream of celery soup, dried mustard powder, Worcestershire sauce, garlic powder, salt, and pepper to the slow cooker. Stir everything together well.
Cover the slow cooker and cook on LOW for 6 to 7 hours or on HIGH for 3 to 4 hours, until the potatoes are tender.
About 30 minutes before serving, reduce the heat setting to WARM if using HIGH. Stir in the cubed Velveeta cheese until it melts completely into the soup base.
