This hearty Crockpot Cowboy Soup blends ground beef, beans, corn, and potatoes in a rich broth, slow-cooked for deep flavor. It is an easy, filling one-pot meal perfect for busy weeknights or chilly evenings.

  • 2 pounds ground beef
  • 1 large onion, chopped
  • 2 (15 ounce) cans kidney beans, rinsed and drained
  • 1 (15 ounce) can black beans, rinsed and drained
  • 1 (15 ounce) can whole kernel corn, drained
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 1 (10 ounce) can Ro-Tel diced tomatoes and green chilies, undrained
  • 4 cups beef broth
  • 1 cup water
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon dried oregano
  • 1/2 teaspoon garlic powder
  • Salt and black pepper to taste
  • 2 medium potatoes, peeled and diced (optional, for a thicker stew)
  • 1 cup shredded cheddar cheese (for topping)
  • Sour cream (for topping)

Instructions

  1. Brown the ground beef in a skillet over medium heat. Drain off any excess fat.
  2. Transfer the browned ground beef to your slow cooker.
  3. Add the chopped onion, kidney beans, black beans, corn, diced tomatoes, Ro-Tel, beef broth, and water to the slow cooker.
  4. Stir in the chili powder, cumin, oregano, and garlic powder. Add salt and pepper. If using potatoes, add them now.
  5. Stir all ingredients together until well combined.
  6. Cover the slow cooker and cook on LOW for 6 to 8 hours or on HIGH for 3 to 4 hours.
  7. Taste the soup before serving and adjust seasonings if needed.
  8. Ladle the soup into bowls and top each serving with shredded cheddar cheese and a dollop of sour cream.

Notes

  • For a richer flavor, brown the onion with the ground beef before adding it to the slow cooker.
  • If you prefer a thicker soup, mash about one cup of the beans against the side of the slow cooker before the final hour of cooking.
  • Serve this savory slow cooker recipe with warm cornbread for a complete meal.
