2 lbs boneless, skinless chicken breasts or thighs
1 (14.5 ounce) can diced tomatoes, undrained
1/2 cup chicken broth
1/2 cup sun-dried tomatoes, drained and roughly chopped
1 tablespoon Italian seasoning
1 teaspoon garlic powder
1/2 teaspoon onion powder
1/4 teaspoon black pepper
1/4 teaspoon salt
4 ounces cream cheese, cut into cubes
1/2 cup heavy cream
1/2 cup grated Parmesan cheese
Fresh basil or parsley, for garnish (optional)
Instructions
Place the chicken into the basin of your slow cooker.
In a bowl, mix the diced tomatoes, chicken broth, chopped sun-dried tomatoes, Italian seasoning, garlic powder, onion powder, pepper, and salt. Pour this mixture over the chicken.
Place the cubes of cream cheese evenly over the top of the chicken and sauce mixture.
Cover the slow cooker and cook on LOW for 6 to 8 hours or on HIGH for 3 to 4 hours, until the chicken is cooked through and tender.
Remove the chicken from the slow cooker and shred it using two forks. Return the shredded chicken to the slow cooker.
Stir in the heavy cream and Parmesan cheese until the sauce is smooth and creamy. Let it heat through for about 10 minutes on the LOW setting, stirring occasionally. Do not boil.
