Create a tender, flavorful turkey breast roast in your slow cooker. This easy crockpot turkey recipe uses herb butter for moisture, making it perfect for stress-free weeknight dinners or as a simple holiday centerpiece.

  • 1 (4-6 lb) boneless or bone-in turkey breast
  • 1/2 cup unsalted butter, softened
  • 2 tablespoons fresh rosemary, chopped
  • 1 tablespoon fresh thyme leaves
  • 1 tablespoon dried sage
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup low-sodium chicken broth
  • 1/4 cup all-purpose flour (for gravy)
  • 1 cup turkey or chicken stock (for gravy)

Instructions

  1. In a small bowl, mix the softened butter with rosemary, thyme, sage, salt, and pepper to create the herb butter.
  2. Pat the turkey breast dry with paper towels. Gently lift the skin over the breast meat and spread half of the herb butter directly onto the meat. Rub the remaining herb butter all over the outside of the turkey skin.
  3. Place the turkey breast, skin-side up, into the basin of your slow cooker. Pour the chicken broth around the base of the turkey.
  4. Cover the slow cooker and cook on LOW for 5 to 7 hours, or on HIGH for 3 to 4 hours, until an internal temperature of 165°F is reached in the thickest part of the breast.
  5. Carefully remove the turkey breast from the slow cooker and transfer it to a cutting board. Tent loosely with foil and let it rest for 15 minutes before slicing.
  6. To make the gravy, pour the cooking liquid from the slow cooker into a saucepan, leaving behind any large solids. Skim off excess fat from the top of the liquid.
  7. In a small bowl, whisk the flour with the 1 cup of turkey or chicken stock until smooth.
  8. Bring the cooking liquid in the saucepan to a simmer over medium heat. Whisk in the flour and stock mixture. Continue to simmer, stirring constantly, until the gravy thickens to your desired consistency. Season with salt and pepper to taste.
  9. Slice the rested turkey breast against the grain and serve immediately with the savory gravy.

Notes

  • For extra crispy skin, transfer the cooked turkey breast to a baking sheet and broil for 3-5 minutes after resting, watching closely to prevent burning.
  • This recipe works well for a Butterball slow cooker turkey breast.
  • If you are using a whole turkey, you will need a much larger slow cooker and significantly longer cooking times.
