Ingredients

Scale

  • 1 can (10 ounces) Rotel diced tomatoes and green chilies, undrained
  • 1 cup shredded cheddar cheese

  • Optional: Sour cream, chopped cilantro for serving

Instructions

  1. Preheat your oven to 375°F (190°C).

  5. Bring the mixture to a simmer and cook for 2-3 minutes, stirring occasionally.
  6. Remove the skillet from the heat. Stir in the shredded cheddar cheese until melted.
  7. Pour the meat mixture into a 9×13 inch baking dish.
  8. Sprinkle the crushed Doritos evenly over the top of the casserole.
  9. Bake for 20-25 minutes, or until the casserole is heated through and the Dorito topping is lightly golden.
  10. Let stand for a few minutes before serving. Serve with optional toppings like sour cream or cilantro.

Notes

  • For a chicken version, substitute 2 cups of shredded cooked chicken for the ground beef.
  • You can assemble this casserole ahead of time and refrigerate it. Add the crushed Doritos just before baking.
  • For a spicier casserole, use a hotter taco seasoning or add a pinch of cayenne pepper.
  • This casserole is a great make-ahead option, similar to how meal planning services can simplify your week.
