A classic 1980s Midwest potluck salad with seasoned ground beef, crunchy Doritos, and a tangy dressing. This recipe includes tips for making it ahead to prevent sogginess.

Ingredients

  • 1 pound ground beef
  • 1 packet taco seasoning
  • 1 head iceberg lettuce, shredded
  • 1 cup shredded cheddar cheese
  • 1 cup crushed Nacho Cheese Doritos
  • 1 cup Catalina dressing
  • 1/2 cup chopped onion
  • 1/2 cup chopped tomatoes
  • 1/2 cup black olives, sliced

Instructions

  1. Cook ground beef in a skillet over medium heat until browned. Drain off any excess fat. Stir in taco seasoning and cook according to package directions. Let cool.
  2. In a large bowl, combine shredded lettuce, cheddar cheese, crushed Doritos, chopped onion, chopped tomatoes, and sliced black olives.
  3. Add the cooled taco-seasoned beef to the bowl.
  4. Pour Catalina dressing over the salad.
  5. Toss gently to combine. Serve immediately or chill for later.

Notes

  • To prevent the Doritos from getting soggy, add them just before serving.
  • For a lighter version, substitute ground turkey for ground beef.
  • This salad can be assembled a few hours ahead of time. Keep the dressing separate and add it just before serving.
