Create a rich, velvety beer cheese dip that tastes like your favorite pub appetizer. This recipe uses simple ingredients and comes together in 15 minutes, making it perfect for game days or parties. Serve warm with soft pretzels.

  • 8 ounces sharp cheddar cheese, shredded
  • 4 ounces cream cheese, softened
  • 1/2 cup lager beer (like a pale ale or pilsner)
  • 1/4 cup heavy cream
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • Pinch of cayenne pepper
  • Salt and black pepper to taste

Instructions

  1. Shred the cheddar cheese if you have not bought pre-shredded cheese.
  2. In a medium saucepan over medium-low heat, combine the beer and heavy cream. Heat gently until warm, stirring occasionally. Do not let it boil.
  3. Reduce the heat to low. Add the softened cream cheese, Dijon mustard, garlic powder, onion powder, and cayenne pepper to the saucepan. Stir until the cream cheese is fully melted and smooth.
  4. Gradually add the shredded cheddar cheese, a handful at a time, stirring constantly until each addition is completely melted and incorporated before adding more. This prevents the cheese from clumping.
  5. Continue stirring until the dip is smooth, creamy, and velvety. This should take about 5 to 7 minutes total for the cheese melting process.
  6. Taste the dip and season with salt and black pepper as needed.
  7. Transfer the warm beer cheese dip to a serving bowl. Serve immediately with soft pretzels, crackers, or vegetable sticks for dipping.

Notes

  • For the best texture, use room temperature cream cheese.
  • If you prefer a stronger beer flavor, use a slightly hoppier beer, but avoid overly bitter IPAs which can clash with the cheese.
  • To keep the dip warm during a party, transfer it to a small slow cooker set to the ‘Keep Warm’ setting.
  • This dip pairs well with a crisp Sauvignon Blanc or a light, slightly malty Amber Ale.
