  • 4 boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon dried oregano
  • 1 cup cherry or grape tomatoes, halved
  • 8 ounces fresh mozzarella cheese, sliced or torn into pieces
  • 1/4 cup fresh basil leaves, chopped
  • 2 tablespoons balsamic glaze (for drizzling)

Instructions

  1. Preheat your oven to 400°F (200°C). Lightly grease a baking dish or line it with parchment paper.
  2. Pat the chicken breasts dry. Place them in the prepared baking dish.
  3. Drizzle the chicken with olive oil. Season evenly with salt, pepper, and dried oregano.
  4. Arrange the halved tomatoes over the top of each chicken breast.
  5. Place the mozzarella pieces evenly over the tomatoes and chicken.
  6. Bake for 20 to 25 minutes, or until the chicken reaches an internal temperature of 165°F (74°C) and the cheese is melted and lightly golden.
  7. Remove the dish from the oven. Sprinkle the fresh chopped basil over the chicken.
  8. Drizzle the entire dish with balsamic glaze before serving.
