Make this refreshing Greek pasta salad packed with crisp vegetables, salty feta, and briny olives. Toss everything in a zesty homemade lemon herb vinaigrette for a perfect make-ahead side dish.

  • 1 pound bowtie pasta (or orzo)
  • 1 cup cherry tomatoes, halved
  • 1 English cucumber, diced
  • 1/2 red onion, thinly sliced
  • 1 cup Kalamata olives, pitted
  • 1 cup crumbled feta cheese
  • 1/2 cup fresh parsley, chopped
  • 1/2 cup olive oil
  • 1/4 cup fresh lemon juice
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Cook the pasta according to package directions until al dente. Drain the pasta and rinse immediately with cold water to stop the cooking process and cool it down. Set aside.
  2. Prepare the dressing: In a small bowl, whisk together the olive oil, lemon juice, minced garlic, dried oregano, salt, and pepper until well combined.
  3. In a large bowl, combine the cooled pasta, halved cherry tomatoes, diced cucumber, sliced red onion, Kalamata olives, and crumbled feta cheese.
  4. Pour the lemon herb vinaigrette over the pasta and vegetable mixture.
  5. Add the chopped fresh parsley. Toss gently until all ingredients are evenly coated with the dressing.
