  • 2 teaspoons baking powder
  • 1/2 teaspoon salt

  • 6 tablespoons cold unsalted butter, cut into small pieces
  • 1/2 cup buttermilk
  • 1 large egg, beaten (for egg wash)

Instructions

  1. Preheat your oven to 375°F (190°C). Lightly grease an 8×8 inch baking dish.
  2. In a large bowl, gently combine the mixed berries, 1/2 cup sugar, cornstarch, lemon juice, and cinnamon. Pour this berry mixture into the prepared baking dish.
  3. Prepare the topping: In a separate medium bowl, whisk together the flour, baking powder, salt, and 1/4 cup sugar for the topping.
  4. Cut in the cold butter using a pastry blender or your fingertips until the mixture resembles coarse crumbs.
  5. Stir in the buttermilk until just combined. Do not overmix the dough.
  6. Drop spoonfuls of the biscuit dough evenly over the berry filling. You do not need to cover the entire surface; gaps are fine.
  7. Brush the tops of the biscuits lightly with the beaten egg wash.
  8. Bake for 35 to 45 minutes, or until the topping is golden brown and the berry filling is bubbly.
  9. Let the cobbler cool for at least 15 minutes before serving. Serve warm with vanilla ice cream or whipped cream.
