  • 1 cup powdered sugar
  • 1/2 cup light corn syrup or maple syrup
  • 1/4 cup melted butter
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1/2 cup semi-sweet chocolate chips (for optional coating)

Instructions

  1. Place the finely chopped pecans, graham cracker crumbs, and powdered sugar in a medium bowl. Mix them together until combined.
  2. In a separate small bowl, whisk together the corn syrup (or maple syrup), melted butter, vanilla extract, and salt.
  3. Pour the wet ingredients over the dry mixture. Stir well until a stiff dough forms.
  4. Roll the dough into small, one-inch balls. Place the balls on a baking sheet lined with parchment paper.
  5. Chill the balls in the refrigerator for at least 30 minutes to firm them up. This step is important before coating.
  6. If coating, melt the chocolate chips in a microwave-safe bowl in 30-second intervals, stirring until smooth.
  7. Dip each chilled ball halfway into the melted chocolate, or drizzle the chocolate over the tops.
  8. Return the coated balls to the parchment-lined sheet and chill again until the chocolate sets completely.
