Bake this incredibly moist and flavorful eggnog bread, a perfect quick bread for holiday breakfasts, desserts, or edible gifting. It features warm winter spices and a simple, sweet eggnog glaze.

Ingredients

Scale
  • 1 3/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground nutmeg
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground cloves
  • 1 cup granulated sugar
  • 1/2 cup (1 stick) unsalted butter, softened
  • 2 large eggs
  • 1 cup eggnog
  • 1 teaspoon vanilla extract
  • 1/2 cup powdered sugar (for glaze)
  • 1 tablespoon eggnog (for glaze)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9×5 inch loaf pan.
  2. In a medium bowl, whisk together the flour, baking soda, salt, nutmeg, cinnamon, and cloves. Set aside.
  3. In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
  4. Beat in the eggs one at a time, mixing well after each addition.
  5. Stir in the eggnog and vanilla extract until just combined.
  6. Gradually add the dry ingredients to the wet ingredients, mixing on low speed until the batter is smooth. Do not overmix.
  7. Pour the batter into the prepared loaf pan.
  8. Bake for 50 to 60 minutes, or until a wooden skewer inserted into the center comes out clean.
  9. Let the bread cool in the pan for 10 minutes before inverting it onto a wire rack to cool completely.
  10. While the bread cools, prepare the glaze: Whisk together the powdered sugar and 1 tablespoon of eggnog until smooth. Add a tiny bit more eggnog if the glaze is too thick.
  11. Drizzle the eggnog glaze over the cooled bread before slicing and serving.

Notes

  • For an extra festive touch, you can add 1/2 cup of dried cranberries to the batter before baking.
  • If you prefer a richer flavor, substitute 1/4 cup of the eggnog with dark rum or brandy.
  • This bread keeps well wrapped tightly at room temperature for up to three days, making it great for homemade edible gifts.
