Easy Baked Eggplant Parmesan Casserole

A lighter, baked version of classic eggplant parmesan, layered with marinara sauce and cheese. This recipe skips the frying for a simpler, healthier meal.

  • 2 medium eggplants, sliced 1/4-inch thick
  • 1 teaspoon salt, plus more to taste
  • 1/2 cup gluten-free breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1 teaspoon dried oregano
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon black pepper
  • 2 cups marinara sauce
  • 1 cup shredded mozzarella cheese
  • 1/4 cup chopped fresh basil, for garnish (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Arrange eggplant slices in a single layer on a baking sheet. Sprinkle with salt and let sit for 30 minutes to draw out moisture. Pat dry with paper towels.
  3. In a shallow dish, combine breadcrumbs, Parmesan cheese, oregano, garlic powder, and pepper.
  4. Dip each eggplant slice into the breadcrumb mixture, coating both sides.
  5. Spread a thin layer of marinara sauce in the bottom of a 9×13 inch baking dish.
  6. Arrange a layer of coated eggplant slices over the sauce.
  7. Spread about half of the remaining marinara sauce over the eggplant.
  8. Sprinkle half of the mozzarella cheese over the sauce.
  9. Repeat the layers: eggplant, remaining marinara sauce, and remaining mozzarella cheese.
  10. Cover the dish with foil and bake for 30 minutes.
  11. Remove the foil and bake for another 10-15 minutes, or until the cheese is melted and bubbly and the eggplant is tender.
  12. Let stand for 5-10 minutes before serving. Garnish with fresh basil if desired.

Notes

  • For a make-ahead option, assemble the casserole up to the point of baking, cover tightly, and refrigerate for up to 24 hours. You may need to add a few extra minutes to the covered baking time.
  • This casserole can also be frozen before baking. Thaw overnight in the refrigerator and bake as directed.
  • To make this gluten-free, ensure your breadcrumbs are certified gluten-free.
