- 2 cups all-purpose flour
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1/2 teaspoon baking soda
- 6 tablespoons cold unsalted butter, cut into cubes
- 3/4 cup cold buttermilk
- 1 pound breakfast sausage
- 1/4 cup all-purpose flour
- 2 cups milk
- 1/2 teaspoon black pepper
- Salt to taste
- Preheat your oven to 425°F (220°C).
- In a large bowl, whisk together the flour, baking powder, salt, and baking soda.
- Cut in the cold butter using a pastry blender or your fingertips until the mixture resembles coarse crumbs.
- Gradually add the buttermilk, stirring until just combined. Do not overmix.
- Turn the dough out onto a lightly floured surface and gently pat it into a 3/4-inch thick rectangle.
- Fold the dough in half and pat it down again. Repeat this process two more times.
- Pat the dough into a 1-inch thick round and cut out biscuits using a biscuit cutter or a glass.
- Place the biscuits on an ungreased baking sheet.
- Bake for 12-15 minutes, or until golden brown.
- While the biscuits bake, cook the breakfast sausage in a large skillet over medium heat, breaking it up as it cooks.
- Drain off most of the grease, leaving about 2 tablespoons in the skillet.
- Sprinkle the 1/4 cup of flour over the sausage and cook for 1 minute, stirring constantly.
- Gradually whisk in the milk until smooth.
- Bring the gravy to a simmer, stirring frequently, until it thickens.
- Stir in the black pepper and salt to taste.
- Serve the hot gravy over the freshly baked biscuits.

- For lump-free gravy, whisk the flour into the sausage and grease mixture before gradually adding the milk.
- You can use a biscuit cutter or the rim of a glass to cut out your biscuits.
- Adjust the amount of milk to reach your desired gravy consistency.
