2 tablespoons olive oil
2 pounds boneless, skinless chicken thighs or breasts
2 large yellow onions, thinly sliced
4 cloves garlic, minced
1 teaspoon dried thyme
1/2 teaspoon salt
1/4 teaspoon black pepper
1 cup beef broth
1 tablespoon Worcestershire sauce
4 slices Swiss cheese
2 tablespoons chopped fresh parsley, for garnish
Instructions
Preheat your oven to 375°F (190°C).
Heat olive oil in a large oven-safe skillet over medium-high heat. Season chicken with salt and pepper. Sear chicken on both sides until golden brown, about 3-4 minutes per side. Remove chicken from skillet and set aside.
Add sliced onions to the skillet. Cook, stirring occasionally, until softened and beginning to caramelize, about 10-15 minutes.
Add minced garlic, thyme, salt, and pepper to the skillet. Cook for 1 minute more until fragrant.
Pour in beef broth and Worcestershire sauce. Scrape up any browned bits from the bottom of the skillet. Bring to a simmer.
Return the chicken to the skillet, nestling it into the onions and broth.
Cover the skillet and transfer it to the preheated oven. Bake for 20-25 minutes, or until chicken is cooked through.
Remove the skillet from the oven. Top each piece of chicken with a slice of Swiss cheese.
Return the skillet to the oven, uncovered, and broil for 1-2 minutes, or until the cheese is melted and bubbly.
Garnish with fresh parsley before serving.
Notes
For deeper onion flavor, caramelize the onions slowly over low heat for 30-45 minutes.
You can substitute Gruyere cheese for Swiss cheese for a richer flavor.
Serve with crusty bread to soak up the delicious sauce.
