In a medium bowl, whisk together the cornmeal, flour, baking powder, salt, and baking soda.
In a separate bowl, whisk the egg and buttermilk together.
Pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix; a few lumps are fine.
Place 1/4 cup of oil or bacon grease in a 10-inch cast iron skillet. Heat the skillet over medium-high heat until the oil is shimmering and very hot, about 5 to 7 minutes. This high heat is key for crispiness.
