Ingredients

  • 12 large jalapeno peppers
  • 8 ounces cream cheese, softened
  • 4 ounces shredded cheddar cheese
  • 2 ounces crumbled bacon
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons melted butter

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cut the jalapeno peppers in half lengthwise and remove the seeds and membranes.
  3. In a medium bowl, combine the cream cheese, cheddar cheese, crumbled bacon, garlic powder, salt, and pepper. Mix well.
  4. Stuff each jalapeno half with the cream cheese mixture.
  5. In a shallow dish, combine the breadcrumbs and Parmesan cheese.
  6. Dip the stuffed jalapenos, cheese-side down, into the breadcrumb mixture to coat.
  7. Place the coated jalapenos on a baking sheet.
  8. Bake for 15-20 minutes, or until the peppers are tender and the topping is golden brown.

Notes

  • For a spicier popper, leave some of the seeds in the jalapenos.
  • You can substitute other cheeses like Monterey Jack or pepper jack.
  • For extra flavor, add a pinch of smoked paprika to the cream cheese mixture.
