  • 4 boneless, skinless chicken breasts, thinly sliced or pounded to even thickness
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon paprika
  • 1/4 teaspoon red pepper flakes (optional)
  • 2 tablespoons olive oil
  • 4 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • 1 1/2 cups heavy cream
  • 1/2 cup chicken broth
  • 1 cup grated Parmesan cheese, plus extra for garnish
  • 1 tablespoon fresh parsley, chopped

Instructions

  1. Season the chicken breasts evenly with salt, pepper, paprika, and red pepper flakes.
  2. Heat the olive oil and 1 tablespoon of butter in a large skillet over medium-high heat.
  3. Sear the chicken for 4 to 5 minutes per side until golden brown and cooked through. Remove the chicken from the skillet and set it aside on a plate.
  4. Reduce the heat to medium. Add the remaining 3 tablespoons of butter to the skillet. Add the minced garlic and cook for about 1 minute until fragrant. Do not let the garlic burn.
  5. Pour in the chicken broth and scrape up any browned bits from the bottom of the skillet. Let the broth simmer for 1 minute.
  6. Stir in the heavy cream. Bring the mixture to a gentle simmer, stirring occasionally.
  7. Reduce the heat to low. Gradually whisk in the grated Parmesan cheese until the sauce is smooth and thickened. Taste the sauce and adjust salt and pepper if needed.
  8. Return the cooked chicken breasts to the skillet, spooning the creamy sauce over them. Let the chicken warm through in the sauce for 2 to 3 minutes.
  9. Garnish with fresh parsley and extra Parmesan cheese before serving immediately.
