1 head romaine lettuce, chopped
1 cup spinach, chopped
1/2 cup fresh parsley, chopped
1/4 cup fresh chives, chopped
1/4 cup fresh dill, chopped
1/4 cup fresh tarragon, chopped
1 cucumber, diced
1 avocado, diced
1/2 cup cherry tomatoes, halved
1/4 cup red onion, thinly sliced
For the Dressing:
1 cup Greek yogurt
1/4 cup mayonnaise
1/4 cup fresh parsley
2 tablespoons fresh chives
1 tablespoon fresh dill
1 tablespoon lemon juice
1 clove garlic, minced
Salt and pepper to taste
Instructions
Prepare the Green Goddess dressing: In a blender or food processor, combine Greek yogurt, mayonnaise, parsley, chives, dill, lemon juice, and garlic. Blend until smooth. Season with salt and pepper.
Chop all the salad ingredients: romaine lettuce, spinach, parsley, chives, dill, tarragon, cucumber, avocado, cherry tomatoes, and red onion.
In a large bowl, combine the chopped lettuce, spinach, herbs, cucumber, tomatoes, and red onion.
Add the diced avocado to the bowl.
Pour the Green Goddess dressing over the salad.
Toss gently to coat all the ingredients evenly.
Serve immediately.
Notes
For a vegan option, use a vegan yogurt and vegan mayonnaise for the dressing.
You can add grilled chicken, shrimp, or chickpeas for extra protein.
The dressing can be made ahead of time and stored in the refrigerator for up to 3 days.
