This simple hamburger potato casserole delivers hearty comfort food using minimal ingredients. It is a reliable, cheesy bake perfect for busy weeknight family dinners.

  • 1 tablespoon olive oil
  • 2 pounds ground beef
  • 1/2 can condensed cream of potato soup
  • 1/2 can condensed cream of celery soup
  • 1/2 can condensed cream of mushroom soup
  • 1 cup milk
  • 4 medium russet potatoes, thinly sliced
  • 1 teaspoon seasoned salt
  • 1/2 teaspoon black pepper
  • 2 cups shredded mozzarella cheese
  • 1 tablespoon melted butter

Instructions

  1. Preheat your oven to 375 degrees Fahrenheit. Lightly grease a 9×13 inch baking dish with butter or cooking spray.
  2. Cook the ground beef in a skillet over medium heat until fully browned. Drain off any excess fat. Season the cooked beef with seasoned salt and pepper. Set aside.
  3. In a large bowl, combine the cream of potato soup, cream of celery soup, cream of mushroom soup, and milk. Stir until the mixture is smooth.
  4. Toss the thinly sliced potatoes with the olive oil in a separate bowl.
  5. Layer half of the seasoned potatoes in the bottom of the prepared baking dish.
  6. Spread the seasoned ground beef evenly over the potato layer.
  7. Pour half of the creamy soup mixture over the beef layer.
  8. Top with the remaining potatoes, followed by the rest of the creamy soup mixture.
  9. Sprinkle one cup of the mozzarella cheese over the top layer.
  10. Cover the dish tightly with aluminum foil.
  11. Bake for 45 minutes.
  12. Remove the foil, sprinkle the remaining one cup of cheese over the top, and drizzle with melted butter.
  13. Return the casserole to the oven, uncovered, and bake for an additional 15 to 20 minutes, or until the potatoes are tender and the cheese is melted and golden brown.
  14. Let the casserole rest for 10 minutes before you serve this hearty potato dish.

Notes

  • For an even richer flavor, substitute one can of soup with French onion soup.
  • You can prepare this entire casserole ahead of time, cover it, and refrigerate it for up to 24 hours before baking. Add 10 minutes to the initial covered baking time if cooking from cold.
