Instructions
In a medium bowl, mix the ground chicken with salt, pepper, garlic powder, and paprika until just combined. Do not overmix.
Shape the chicken mixture into small, uniform nugget shapes, about 1 inch thick. Place them on a plate and chill in the refrigerator for 15 minutes to help them hold their shape.
Set up a standard breading station: Place the flour in one shallow dish. Whisk the egg in a second dish. Combine the panko breadcrumbs and crushed cornflakes in a third dish.
Dredge each chilled nugget first in the flour, shaking off excess. Dip it into the egg mixture, allowing excess to drip off. Finally, press the nugget firmly into the breadcrumb mixture to coat completely.
