  • 1.5 lbs boneless, skinless chicken breasts, cut into 1-inch pieces
  • 1 large head of broccoli, cut into florets
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup honey
  • 1/4 cup low-sodium soy sauce
  • 2 tablespoons rice vinegar
  • 1 tablespoon minced fresh ginger
  • 3 cloves garlic, minced
  • 1 teaspoon cornstarch mixed with 1 tablespoon cold water (slurry)
  • Sesame seeds, for garnish (optional)
  • Cooked rice or noodles, for serving

Instructions

  1. Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper for easy cleanup.
  2. In a large bowl, toss the chicken pieces with olive oil, salt, and pepper. Spread the seasoned chicken in a single layer on one half of the prepared baking sheet.
  3. Toss the broccoli florets with a small drizzle of olive oil and place them on the other half of the baking sheet.
  4. Bake for 15 minutes.
  5. While the chicken and broccoli bake, prepare the sauce. In a small saucepan, whisk together the honey, soy sauce, rice vinegar, ginger, and minced garlic. Bring the mixture to a simmer over medium heat.
  6. Stir the cornstarch slurry into the simmering sauce. Cook, stirring constantly, until the sauce thickens slightly, about 1 minute. Remove from heat.
  7. Remove the baking sheet from the oven. Drizzle half of the honey garlic sauce over the chicken pieces and toss gently to coat.
  8. Return the pan to the oven and bake for another 5-7 minutes, or until the chicken is cooked through (internal temperature reaches 165°F or 74°C).
  9. Remove the pan from the oven. Drizzle the remaining sauce over the chicken and broccoli. Toss everything together lightly on the pan.
  10. Garnish with sesame seeds, if desired. Serve immediately over cooked rice or noodles for a complete family friendly chicken dinner.
