Create a truly delicious side dish with these easy roasted carrots glazed with honey and garlic. This recipe concentrates the natural sweetness of the carrots, resulting in tender, caramelized vegetables perfect for weeknight meals or holiday tables.

Ingredients

Scale
  • 2 lbs carrots, peeled and cut into 1-inch pieces
  • 3 tablespoons olive oil
  • 2 tablespoons honey
  • 2 cloves garlic, minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon fresh parsley, chopped (for garnish)

Instructions

  1. Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius). Line a large baking sheet with parchment paper for easy cleanup.
  2. In a large bowl, toss the cut carrots with olive oil, salt, and pepper until they are evenly coated.
  3. Spread the seasoned carrots in a single layer on the prepared baking sheet.
  4. Roast for 15 minutes.
  5. While the carrots roast, whisk together the honey and minced garlic in a small bowl.
  6. Remove the carrots from the oven. Drizzle the honey-garlic mixture over the carrots and toss gently to coat them completely.
  7. Return the carrots to the oven and roast for another 10 to 15 minutes, or until the carrots are tender and slightly caramelized.
  8. Remove from the oven, sprinkle with fresh parsley, and serve immediately as your perfect carrots side dish.

Notes

  • This recipe is naturally gluten free and vegetarian.
  • For a different flavor profile, substitute maple syrup for honey, or add a sprig of fresh rosemary to the initial roasting step for rosemary roasted carrots.
  • To achieve tender crisp carrots, watch the final roasting time closely; do not overcook.
