Create tender, caramelized carrots coated in a rich honey, garlic, and butter glaze. This easy roasted carrots recipe is perfect for weeknight dinners or holiday tables.

  • 4 tablespoons unsalted butter, melted
  • 3 tablespoons honey
  • 2 cloves garlic, minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 teaspoon fresh thyme leaves (optional)

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper for simple cleanup.
  2. Place the cut carrots in a large bowl.
  3. In a small bowl, whisk together the melted butter, honey, minced garlic, salt, and pepper until combined. If using, stir in the fresh thyme leaves.
  4. Pour the honey butter mixture over the carrots and toss well until every piece is evenly coated.
  5. Spread the coated carrots in a single layer on the prepared baking sheet. Avoid overcrowding the pan to promote better roasting and caramelization.
  6. Roast for 20 to 25 minutes, tossing halfway through, until the carrots are tender and the glaze has caramelized slightly.
