Make this creamy Instant Pot Lasagna Soup for a hearty, comforting meal that tastes like classic lasagna without the layering. It is a simple, one-pot dinner ready fast.

  • 1 tablespoon olive oil
  • 1 pound ground beef or Italian sausage
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1 (28 ounce) can crushed tomatoes
  • 1 (15 ounce) can tomato sauce
  • 4 cups beef broth
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 8 ounces lasagna noodles, broken into 1-inch pieces
  • 1/2 cup heavy cream
  • 1 cup frozen peas (optional)
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese

Instructions

  1. Set the Instant Pot to Sauté mode. Add olive oil and brown the ground meat. Drain excess fat.
  2. Add the chopped onion to the pot and cook until softened, about 3 minutes. Add the minced garlic and cook for 1 minute more until fragrant.
  3. Pour in the crushed tomatoes, tomato sauce, beef broth, basil, oregano, salt, and pepper. Stir to combine.
  4. Add the broken lasagna noodles to the liquid. Do not stir them in completely; press them down slightly so they are mostly submerged.
  5. Secure the lid and set the valve to sealing. Cook on High Pressure for 4 minutes.
  6. Once cooking is complete, perform a Quick Release of the pressure.
  7. Stir the soup well. If using, stir in the heavy cream and frozen peas. Let the soup sit for 5 minutes to allow the peas to warm and the soup to thicken slightly.
  8. Stir in half of the mozzarella and all of the Parmesan cheese until melted and creamy.
  9. Serve immediately, topping each bowl with the remaining mozzarella cheese.

  • For a richer flavor, brown Italian sausage instead of ground beef.
  • This soup pairs well with warm garlic bread for dipping.
  • If you prefer a less rich soup, reduce the heavy cream to 1/4 cup.
