A cheesy, low-carb chicken bake with bacon, inspired by jalapeno poppers. Perfect for keto meal prep.

  • 2 lbs boneless, skinless chicken breasts, cut into 1-inch pieces
  • 8 oz cream cheese, softened
  • 1/2 cup sour cream
  • 1/4 cup mayonnaise
  • 1/2 cup shredded cheddar cheese
  • 1/2 cup shredded Monterey Jack cheese
  • 23 jalapenos, seeded and finely diced
  • 4 slices bacon, cooked and crumbled
  • 1/4 cup chopped fresh chives
  • Salt and black pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large bowl, combine the cream cheese, sour cream, and mayonnaise. Mix until smooth.
  3. Stir in the shredded cheddar and Monterey Jack cheeses, diced jalapenos, and half of the crumbled bacon. Season with salt and pepper.
  4. Add the chicken pieces to the cheese mixture and stir to coat evenly.
  5. Pour the mixture into a greased 9×13 inch baking dish.
  6. Bake for 25-30 minutes, or until the chicken is cooked through and the casserole is bubbly.
  7. Top with the remaining crumbled bacon and fresh chives before serving.

Notes

  • For a spicier casserole, leave some seeds in the jalapenos.
  • You can substitute other cheeses like pepper jack for extra heat.
