  • 4 bone-in pork chops (about 1 inch thick)
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon cayenne pepper (optional)

Instructions

  1. Preheat your oven to 400°F (200°C). Lightly grease a baking dish or line it with parchment paper.
  2. In a small bowl, combine the salt, pepper, smoked paprika, garlic powder, oregano, onion powder, and cayenne pepper to create the spice rub.
  3. Pat the pork chops dry with paper towels. Rub both sides of each pork chop evenly with the olive oil.
  4. Generously sprinkle the spice rub over all sides of the pork chops, pressing gently so the seasoning adheres.
  5. Place the seasoned pork chops in the prepared baking dish in a single layer.
  6. Bake for 18 to 22 minutes, depending on thickness, until the internal temperature reaches 145°F (63°C) for juicy results.
  7. Remove the pork chops from the oven and let them rest on a cutting board for 5 minutes before serving. This resting period keeps the meat tender.

Notes

  • For extra flavor, you can add 2 tablespoons of melted garlic butter over the chops during the last 5 minutes of baking.
  • If you prefer a Parmesan crust, mix 1/2 cup grated Parmesan cheese with the spice rub ingredients before coating the chops.
  • Use a meat thermometer to check for doneness; 145°F is the safe internal temperature for juicy pork.
