4 boneless, skinless chicken breasts, pounded to 1/2-inch thickness
1 cup almond flour
1/2 cup grated Parmesan cheese, plus 1/4 cup for topping
1 teaspoon garlic powder
1/2 teaspoon dried oregano
1/2 teaspoon salt
1/4 teaspoon black pepper
2 large eggs, beaten
1/4 cup avocado oil spray or olive oil spray
1 cup low-carb marinara sauce (ensure it has no added sugar)
1 cup shredded mozzarella cheese

Instructions
Preheat your air fryer to 380°F (195°C). Lightly spray the air fryer basket with oil.
Set up a breading station with three shallow dishes. In the first dish, combine the almond flour, 1/2 cup Parmesan cheese, garlic powder, oregano, salt, and pepper. Mix well.
In the second dish, place the beaten eggs.
Dip each pounded chicken breast first into the egg mixture, letting excess drip off, then press firmly into the almond flour mixture to coat both sides completely. Press the coating on to create a firm crust.
Lightly spray both sides of the coated chicken cutlets with oil spray. Place two cutlets in the air fryer basket, ensuring they do not overlap.
Air fry for 10 minutes, flipping halfway through, until the chicken is golden brown and cooked through (internal temperature reaches 165°F or 74°C). Repeat with the remaining chicken.
Once cooked, top each chicken breast with 1/4 cup of marinara sauce and a sprinkle of mozzarella cheese and the remaining 1/4 cup of Parmesan cheese.
Return the chicken to the air fryer for an additional 2-3 minutes, or until the cheese is melted and bubbly.
Remove carefully, garnish with fresh basil, and serve immediately.
Notes
For the crispiest crust, press the almond flour mixture onto the chicken firmly.
Use a store-bought low-carb marinara sauce or make your own by simmering crushed tomatoes with garlic and Italian herbs.
If you do not have an air fryer, bake the chicken at 400°F (200°C) for 15-20 minutes, then top with sauce and cheese and bake for 5 more minutes until melted.
