Ingredients
Scale
1 sheet frozen puff pastry, thawed
1 cup fresh spinach, finely chopped
4 ounces feta cheese, crumbled
1 large egg, beaten (for egg wash)
1 teaspoon dried oregano
1/4 teaspoon black pepper
Pinch of salt
Instructions
Preheat your oven to 400°F (200°C). Line two baking sheets with parchment paper.
In a medium bowl, combine the chopped spinach, crumbled feta cheese, dried oregano, black pepper, and salt. Mix until the ingredients are evenly distributed.
Unfold the thawed puff pastry sheet onto a lightly floured surface. Cut the pastry into 12 equal squares.
Place about one tablespoon of the spinach and feta mixture onto the center of each pastry square.
Fold the pastry over to form a triangle or a square package, pressing the edges firmly together to seal. You can crimp the edges with a fork for extra security.
Place the sealed crisps onto the prepared baking sheets.
Brush the tops of the crisps lightly with the beaten egg wash. This helps them brown nicely.
Bake for 12 to 15 minutes, or until the pastry is puffed and golden brown and the filling is hot.
Remove from the oven and let cool slightly on the baking sheet before serving.
Notes
For an extra Mediterranean flavor, you can add a small amount of lemon zest to the filling mixture.
These crisps pair well with a simple yogurt dip or tzatziki sauce for serving.
If you are looking for simple weeknight meals or inspiration for your weekly meal planning, these crisps are a fast option.
These are excellent served warm but hold up well at room temperature for serving at parties.
