Make soft, chewy caramels quickly in your microwave. This recipe offers a simple, fuss-free method for homemade caramel candy.

  • 1 cup granulated sugar
  • 1/2 cup butter, cut into pieces
  • 1/2 cup light corn syrup
  • 1/2 cup sweetened condensed milk
  • 1 teaspoon vanilla extract

Instructions

  1. Grease an 8×8 inch baking pan with butter or cooking spray.
  2. In a microwave-safe 2-quart bowl, combine granulated sugar, butter, corn syrup, and sweetened condensed milk.
  3. Microwave on high for 5 minutes. Stir well.
  4. Continue microwaving in 1-minute intervals, stirring after each interval, until the mixture reaches 245°F (118°C) on a candy thermometer, or until it forms a firm ball when dropped into cold water. This usually takes about 10-15 minutes total microwaving time.
  5. Carefully stir in the vanilla extract.
  6. Pour the mixture into the prepared baking pan. Do not scrape the bowl.
  7. Let the caramel cool completely at room temperature for at least 2 hours.
  8. Once cooled, cut into squares and wrap individually if desired.

Notes

  • Microwave wattages vary, so cooking times may differ. Watch the caramel closely during the final stages.
  • For a softer caramel, reduce the total microwaving time slightly. For a firmer caramel, extend it slightly.
  • If you don’t have a candy thermometer, test the caramel by dropping a small amount into a glass of ice water. It should form a firm ball that holds its shape.
