Ingredients
Scale
3 cups cooked, shredded chicken (rotisserie chicken works well)
Preheat your oven to 375°F (190°C). Lightly grease a 9×13 inch baking dish.
In a large bowl, combine the shredded chicken, softened cream cheese, sour cream, cream of chicken soup, cheddar cheese, garlic powder, onion powder, salt, and pepper. Mix until all ingredients are fully incorporated and the mixture is creamy.
Spread the chicken mixture evenly into the prepared baking dish.
In a separate small bowl, combine the crushed buttery crackers and the melted butter. Stir until the crackers are evenly coated.
Sprinkle the buttery cracker mixture evenly over the top of the chicken mixture in the baking dish.
Bake for 25 to 30 minutes, or until the casserole is hot and bubbly throughout and the topping is golden brown.
Let the casserole rest for 5 minutes before you serve it.
Notes
For an even richer flavor, substitute cottage cheese for half of the sour cream.
You can prepare this casserole completely, cover it, and refrigerate it up to 24 hours before baking. Add about 10 minutes to the baking time if baking directly from the refrigerator.
If you want to add vegetables, stir in 1 cup of frozen peas or steamed broccoli florets with the chicken mixture.
