A simple recipe for classic chocolate peanut butter oatmeal cookies that require no oven time. These cookies are chewy, fudgy, and quick to make on the stovetop.

Ingredients

  • 2 cups granulated sugar
  • 1/2 cup (1 stick) unsalted butter
  • 1/2 cup milk
  • 1/4 cup unsweetened cocoa powder
  • 1/2 cup creamy peanut butter
  • 1 teaspoon vanilla extract
  • 3 cups old-fashioned rolled oats

Instructions

  1. Combine sugar, butter, milk, and cocoa powder in a medium saucepan.
  2. Bring the mixture to a rolling boil over medium heat, stirring constantly.
  3. Boil for exactly 1 minute, then remove from heat.
  4. Stir in the peanut butter and vanilla extract until smooth.
  5. Add the rolled oats and stir until evenly coated.
  6. Drop spoonfuls of the mixture onto wax paper-lined baking sheets.
  7. Let the cookies cool and set for at least 30 minutes before serving.

Notes

  • For chewier cookies, boil the mixture for 1 minute. For firmer cookies, boil for 1.5 to 2 minutes.
  • Ensure your oats are old-fashioned rolled oats for the best texture. Instant oats may make the cookies too soft.
  • You can add chopped nuts or chocolate chips to the mixture along with the oats for extra flavor and texture.
