A quick and easy one-pot pasta dish with taco flavors, perfect for a weeknight meal. This recipe uses ground beef, salsa, and cheese for a family-friendly dinner that’s ready in 30 minutes.

  • 1 tablespoon olive oil
  • 1 pound ground beef
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 packet (1 ounce) taco seasoning
  • 1 can (15 ounces) diced tomatoes with green chilies, undrained
  • 1 can (15 ounces) tomato sauce
  • 2 cups beef broth
  • 2 cups uncooked pasta (such as rotini or penne)
  • 1 cup shredded cheddar cheese
  • Optional toppings: sour cream, chopped cilantro, diced tomatoes, sliced jalapeños

Instructions

  1. Heat olive oil in a large skillet or Dutch oven over medium-high heat. Add ground beef and cook, breaking it up with a spoon, until browned. Drain off any excess grease.
  2. Add the chopped onion to the skillet and cook until softened, about 5 minutes. Stir in the minced garlic and cook for 1 minute more until fragrant.
  3. Stir in the taco seasoning, diced tomatoes with green chilies (undrained), tomato sauce, and beef broth. Bring the mixture to a simmer.
  4. Add the uncooked pasta to the skillet, ensuring it is mostly submerged in the liquid. Cover the skillet, reduce heat to medium-low, and simmer for 15-20 minutes, or until the pasta is al dente and most of the liquid has been absorbed. Stir occasionally to prevent sticking.
  5. Remove the skillet from the heat. Stir in the shredded cheddar cheese until melted and creamy.
  6. Serve immediately, garnished with your favorite toppings.

Notes

  • For a spicier dish, use a hotter salsa or add a pinch of cayenne pepper.
  • To make this dairy-free, omit the cheese or use your favorite dairy-free shredded cheese alternative.
  • If the pasta seems too dry before it’s fully cooked, add a little more broth or water, about 1/4 cup at a time.
