Make the trending, creamy, and tangy Grillo’s Pickle Dip. This high-protein version is simple to prepare and perfect for game days or parties.

  • 32 oz container Grillo’s Pickles, halved
  • 16 oz low fat cottage cheese
  • 6 oz reduced fat sharp cheddar cheese
  • 3 slices center cut bacon, cooked crispy
  • 8 wedges Light Laughing Cow cheese wedges
  • 1/4 cup Hidden Valley Ranch seasoning mix
  • 6 green onions, chopped
  • 2 fresh jalapeños, minced
  • 1/4 cup pickle juice
  • Salt, pepper, garlic powder, and onion powder to taste

Instructions

  1. Drain the Grillo’s pickles, reserving 1/4 cup of the pickle juice. Roughly chop the pickles.
  2. In a food processor, combine the cottage cheese, Laughing Cow wedges, and reserved pickle juice. Process until the mixture is smooth and creamy.
  3. Transfer the creamy base to a large mixing bowl.
  4. Add the chopped pickles, cooked bacon pieces, sharp cheddar cheese, ranch seasoning mix, chopped green onions, and minced jalapeños to the bowl.
  5. Mix all ingredients together until they are evenly combined.
  6. Taste the dip and season with salt, pepper, garlic powder, and onion powder as needed.
  7. Cover the dip and chill in the refrigerator for at least one hour before serving to allow the flavors to meld.
  8. Serve your easy appetizer dip with chips, crackers, or fresh vegetables.

Notes

  • For a richer flavor, you can use full-fat cottage cheese instead of low-fat.
  • If you do not have Grillo’s pickles, use your favorite brand of crunchy dill pickles.
