1 (12 ounce) package white chocolate chips
1/2 cup creamy peanut butter (or substitute with sunflower seed butter for nut-free option)
1 teaspoon vanilla extract
1 (3.4 ounce) box instant pistachio pudding mix
2 cups powdered sugar
1/2 cup chopped pistachios (optional mix-in)
Instructions
Measure the Rice Chex cereal into a very large bowl. Set aside.
In a medium microwave-safe bowl, combine the white chocolate chips and peanut butter. Microwave in 30-second intervals, stirring well after each, until the mixture is smooth and fully melted. This usually takes 60 to 90 seconds total.
Stir the vanilla extract and the entire box of instant pistachio pudding mix into the melted chocolate mixture until fully combined.
Pour the chocolate coating evenly over the cereal in the large bowl. Gently fold the cereal until it is completely coated with the pistachio mixture.
Place the powdered sugar into a large Ziploc bag or a clean paper bag. Add the coated cereal mixture to the bag. If using, add the chopped pistachios now.
Seal the bag and shake well until the cereal pieces are evenly coated with powdered sugar.
Spread the finished Pistachio Puppy Chow onto a sheet of parchment paper or wax paper to cool and set completely.
