  • 1 1/2 cups all-purpose flour
  • 2 tablespoons granulated sugar
  • 2 teaspoons baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon ground cloves
  • 1/2 teaspoon salt
  • 1 1/4 cups milk
  • 1/2 cup pumpkin puree
  • 2 large eggs, separated
  • 1/4 cup unsalted butter, melted
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your waffle iron according to manufacturer instructions.
  2. In a large bowl, whisk together the flour, sugar, baking powder, cinnamon, nutmeg, ginger, cloves, and salt.
  3. In a separate medium bowl, whisk together the milk, pumpkin puree, egg yolks, melted butter, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.
  5. In a clean bowl, beat the egg whites until stiff peaks form. Gently fold the egg whites into the batter.
  6. Lightly grease the waffle iron if needed. Pour about 1/2 cup of batter onto the hot waffle iron for each waffle.
  7. Cook according to your waffle iron’s instructions, typically 3-5 minutes, until golden brown and cooked through.
  8. Serve immediately with your favorite toppings.

Notes

  • For crispier waffles, you can add an extra tablespoon of melted butter to the batter.
  • Ensure your pumpkin puree is not pumpkin pie filling.
  • Leftover waffles can be stored in an airtight container in the refrigerator and reheated in a toaster or oven.
