  • 10 sheets rice paper wrappers
  • 1 tablespoon neutral oil (for brushing)
  • 1 cup finely shredded cabbage
  • 1/2 cup finely chopped carrots
  • 1/4 cup finely chopped green onion
  • 1/4 cup crumbled firm tofu (or ground chicken for variation)
  • 1 teaspoon soy sauce or tamari
  • 1/2 teaspoon sesame oil
  • 1/4 teaspoon ground ginger
  • Pinch of white pepper

Instructions

  1. Prepare the filling: In a medium bowl, combine the shredded cabbage, carrots, green onion, crumbled tofu (or chicken), soy sauce, sesame oil, ginger, and white pepper. Mix until all ingredients are evenly distributed.
  2. Prepare the rice paper: Fill a shallow dish wide enough to fit a rice paper sheet with warm water. Quickly dip one rice paper sheet into the water for about 5 to 10 seconds until it is pliable but not overly soft. Lay it flat on a clean, slightly damp cutting board or surface.
  3. Assemble the dumplings: Place about 1 tablespoon of filling near the bottom edge of the softened rice paper. Fold the sides inward over the filling, then tightly roll the wrapper upwards, similar to rolling a spring roll, to create a sealed dumpling shape. Repeat with the remaining wrappers and filling.
  4. Preheat the air fryer: Set your air fryer to 380°F (195°C).
  5. Cook the dumplings: Lightly brush or spray the assembled rice paper dumplings on all sides with neutral oil. Place them in the air fryer basket in a single layer, ensuring they do not touch.
  6. Air fry for 8 to 10 minutes, flipping them halfway through, until the rice paper is golden brown and very crispy.
  7. Serve immediately with your preferred dipping sauce.

Notes

  • For a non-vegetarian option, substitute the tofu with 1/2 cup of finely ground chicken or shrimp.
  • If you do not have an air fryer, you can pan fry these dumplings in 1/4 inch of hot oil until golden and crisp on all sides, turning frequently.
  • To make this a quick dumpling hack, use pre-shredded coleslaw mix for the cabbage and carrots.
