Learn the best way to roast sweet potatoes to achieve a crispy exterior and a tender, melt-in-your-mouth interior. This recipe provides simple instructions for achieving perfect texture, plus options for both savory garlic herb and sweet maple cinnamon flavor profiles.

Ingredients

Scale
  • 3 large sweet potatoes (about 2 lbs), peeled and cut into 1-inch cubes
  • 3 tablespoons olive oil (for savory) OR 2 tablespoons avocado oil (for sweet)
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • Optional Savory Seasoning: 2 cloves garlic, minced, 1 teaspoon dried rosemary, 1/4 cup grated Parmesan cheese (added after roasting)
  • Optional Sweet Seasoning: 2 tablespoons maple syrup, 1 teaspoon ground cinnamon, 1 tablespoon brown sugar (added halfway through cooking)

Instructions

  1. Preheat your oven to 425°F (220°C). Line a large, rimmed baking sheet with parchment paper. Do not overcrowd the pan; use two sheets if necessary to ensure crisp edges.
  2. In a large bowl, toss the sweet potato cubes with the olive oil (or avocado oil), salt, and pepper. Mix until the potatoes are evenly coated.
  3. Spread the seasoned sweet potatoes in a single layer on the prepared baking sheet.
  4. Roast for 20 minutes.
  5. If making the sweet version, remove the pan, drizzle with maple syrup, sprinkle with cinnamon and brown sugar, toss gently, and return to the oven. If making the savory version, continue roasting plain.
  6. Continue roasting for another 10 to 15 minutes, or until the potatoes are deeply golden brown, caramelized, and tender when pierced with a fork. Total cook time is usually 30 to 35 minutes.
  7. For the savory version, immediately toss the hot potatoes with the minced garlic and dried rosemary. Sprinkle with Parmesan cheese just before serving.
  8. Serve immediately as a healthy roasted vegetable side dish.

Notes

  • For the crispiest roasted sweet potatoes, avoid overcrowding the pan. Give the potatoes space so they roast instead of steam.
  • If you prefer a vegan roasted sweet potatoes option, skip the Parmesan cheese in the savory version.
  • This recipe is naturally gluten free sweet potato side.
  • To achieve caramelized sweet potatoes, ensure your oven is fully preheated to the correct temperature before adding the pan.
