1/2 cup breadcrumbs
1/4 cup milk
1 small onion, finely minced
1 large egg, lightly beaten
1 teaspoon salt
1/2 teaspoon black pepper
1 tablespoon Worcestershire sauce
1 tablespoon olive oil
2 tablespoons butter
8 oz cremini mushrooms, sliced
1/2 cup chopped yellow onion
2 tablespoons all-purpose flour
2 cups beef broth
1 teaspoon dried thyme
1 teaspoon Dijon mustard
1/2 teaspoon salt (for gravy)
1/4 teaspoon black pepper (for gravy)
Instructions
In a medium bowl, combine the ground beef, breadcrumbs, milk, minced onion, egg, 1 teaspoon salt, 1/2 teaspoon pepper, and Worcestershire sauce. Mix gently with your hands until just combined; do not overmix.
Divide the mixture into 4 equal portions and form them into oval-shaped patties, about 3/4 inch thick.
Heat the olive oil in a large skillet over medium heat. Sear the patties for 3 to 4 minutes per side until browned. Remove the patties from the skillet and set them aside on a plate.
Add the butter to the same skillet. Add the sliced mushrooms and chopped onion. Cook, stirring occasionally, until the vegetables soften and brown, about 5 to 7 minutes.
Sprinkle the flour over the cooked vegetables and stir constantly for 1 minute to cook out the raw flour taste.
Gradually whisk in the beef broth, scraping up any browned bits from the bottom of the pan. Stir in the dried thyme and Dijon mustard. Bring the gravy to a simmer.
Season the gravy with 1/2 teaspoon salt and 1/4 teaspoon pepper. Taste and adjust seasoning as needed.
Return the beef patties to the skillet, nestling them into the gravy. Reduce the heat to low, cover the skillet, and simmer for 10 to 15 minutes, or until the patties are cooked through and tender.
Serve the Salisbury steak immediately with plenty of the rich mushroom gravy. This is a great family favorite recipe when served over mashed potatoes.
Notes
For extra juicy Salisbury steak, you can add 1 tablespoon of cold water to the beef mixture before forming the patties.
