1 tablespoon olive oil
1 pound raw shrimp, peeled and deveined, chopped into small pieces
1 teaspoon chili powder
1/2 teaspoon cumin
1/4 teaspoon garlic powder
1/4 teaspoon salt
1/8 teaspoon black pepper
1/2 cup finely chopped onion
1/2 cup shredded Monterey Jack cheese
1/2 cup shredded cheddar cheese
8 medium flour tortillas (8-inch)
2 tablespoons butter, softened
Instructions
Heat the olive oil in a skillet over medium heat. Add the chopped shrimp.
Season the shrimp with chili powder, cumin, garlic powder, salt, and pepper. Cook for 3 to 4 minutes until the shrimp turns pink and is cooked through. Remove the shrimp from the skillet and set aside.
Add the chopped onion to the same skillet and cook until soft, about 2 minutes. Remove the onion and add it to the shrimp mixture. Stir to combine the filling.
Wipe the skillet clean. Spread a thin layer of softened butter on one side of each tortilla.
Place one tortilla, butter-side down, in the skillet over medium heat. Sprinkle a quarter of the cheese mixture over the tortilla. Top with a quarter of the shrimp filling. Place a second tortilla on top, butter-side up.
Cook for 3 to 4 minutes until the bottom tortilla is golden brown and the cheese begins to melt. Carefully flip the quesadilla and cook the other side for 3 to 4 minutes until golden and crisp.
Remove the quesadilla from the pan. Repeat with the remaining ingredients to make three more quesadillas.
Cut each quesadilla into wedges before serving.
Notes
For an extra layer of flavor, add a teaspoon of lime juice to the shrimp mixture after cooking.
