  • 1/4 cup chopped fresh cilantro
  • 12 small corn or flour tortillas
  • For the Avocado Crema:
  • 1 ripe avocado
  • 1/2 cup plain Greek yogurt
  • 1 tablespoon lime juice
  • Pinch of salt
  • For Serving:
  • 2 cups shredded cabbage or slaw mix

Instructions

  1. Prepare the shrimp marinade: In a medium bowl, toss the shrimp with olive oil, chili powder, cumin, salt, and pepper. Add the 1/4 cup of lime juice and chopped cilantro. Let it marinate for 10 minutes while you prepare the crema.
  2. Make the avocado crema: Combine the avocado, Greek yogurt, 1 tablespoon of lime juice, and a pinch of salt in a small food processor or blender. Blend until completely smooth. Add a teaspoon of water if the mixture is too thick.
  3. Cook the shrimp: Heat a large skillet over medium-high heat. Add the marinated shrimp in a single layer (cook in batches if necessary). Cook for 2-3 minutes per side until pink and opaque. Do not overcook.
  4. Warm the tortillas: Warm the tortillas according to package directions, either in a dry skillet or wrapped in a damp paper towel in the microwave.
  5. Assemble the tacos: Place a portion of cooked shrimp onto each warm tortilla. Top with shredded cabbage and drizzle generously with the avocado crema. Serve immediately.
